Nuestra historia
Rosa Mexican Kitchen opened in 2019 to bring the comida de rancho of Zacatecas to Colorado. Inspired by the warm welcome of Mexican mothers and grandmothers, Chef Edgar Eduardo Ruiz cooks from family recipes: slow red mole, pozole, hand-pressed tortillas and salsas made fresh every day.
